SYB students invited to discover the secrets of Carrefour Jinqiao Bread Area
On Monday June the 16th SYB students were invited to visit one of Shanghai’s most impressive supermarket: Carrefour Jinqiao. In China since 1995, each Carrefour supermarket offers more than 120 different professions including bakers !
The Carrefour Foundation has been involved in SYB since its very beginning and has become a historical sponsor by supporting the operational expenses of the charity program. Thanks to this partnership, unique links have also been created with Carrefour China to further support SYB charity projects.
On the 16th SYB students were welcomed by Pierre Canivet, in charge of the development of the bakery department of the 250 supermarkets of Carrefour in China. Pierre and his right hand Leon guided them through the supermarket to the Bakery Area where they had the rare opportunity to watch Bakers at work and to take a look at all the finished products displayed for selling. This visit also proved to be a great occasion for them to review a few basics before their final examinations. Fortunately, most of them were able to answer Canivet’s questions when he asked about French baguette and Chinese Bread proper baking temperatures.
After visiting the Bread Area, Carrefour employees in charge of Human Resources kindly gave them a tour of employees’ facilities above the supermarket and a presentation was given on Carrefour innovative visions and career opportunities.
To conclude the visit, Pierre Canivet offered to give a complete and surprising presentation of his experience as a Baker all around the world. As he has been an employee of Carrefour for 25 years, Canivet has developed Bakery in countries such as Columbia, Czech Republica, Korea or Malaysia. His experience in the Bakery field for supermarkets is absolutely outstanding and SYB students were surprised to discover so many differences between breads from all over the world. For instance, did you know that Columbian bread has always been influenced by Mexican habits and that Columbian people mostly like to eat sweet bread ? In Czech Republica bread has a strong German influence, it has to be soft, not too crispy and with a strong smell. According to Canivet, European people pay more attention to the way a bread tastes than to its appearance. That is not the case in Korea where « Chefs are not Bakers, they are Designers ». Their bread is simple but each one of them is designed in a way that makes them look precious and original.
Such a visit certainly strengthened SYB students’ dreams of becoming Bakers and made them realize that their future is full of promises. As Pierre Canivet said : «Bakery in China is full of opportunities and keeps evolving». Thanks to companies such as Carrefour, SYB graduates will be given plenty of interesting opportunities that will allow them to lead independent and successful lives long after their graduation.

SYB学员受邀探索家乐福金桥店的烘焙工作室
6月16日,周一,海上青焙坊的学员们受邀参观了上海最有影响力的超市之一:家乐福金桥店!在中国,从1995年开始,每个家乐福卖场都提供120中不同领域的专家,其中也包括烘焙师!
家乐福基金会从海上青焙坊成立之初就为我们提供帮助,并通过为我们提供运营资金来赞助SYB项目。正是因为和家乐福基金会的合作,我们和家乐福中国也构建了特殊的联系,以帮助我们更好地发展。
16日当天,负责管理中国250多家家乐福门店烘焙部门的Pierre Canivet先生欢迎了海上青焙坊的学员们。Pierre和他的助手Leon带领同学们来到了烘焙工作室,在那里,大家有了难得的机会一览家乐福烘焙师门工作的情景并欣赏了他们制作的成品。这次参观也让学员们在期末考试之前有机会复习了基本的烘焙知识!令人欣慰的是,大部分的学员都能够顺利地回答Canivet先生提出的有关法式长棍和中式面包烘焙适宜温度的问题。
参观完烘焙工作室之后,家乐福公司负责人力资源管理的员工也亲切地带领大家参观了位于卖场楼上家乐福员工的所用的设备,之后她也就家乐福的创新精神和就业发展空间作了演讲。
在参观结束之前,Pierre Canivet提出希望可以和大家分享一下他在世界各地,例如哥伦比亚、捷克、韩国以及马来西亚从事烘焙行业的经历。他在超市烘焙界的经验令人印象非常深刻,同学们也都惊讶地发现原来不同地区的面包可以有如此巨大的差异!例如,哥伦比亚的面包很大程度上受到了墨西哥文化的影响而且哥伦比亚人大都喜欢吃偏甜的面包;在捷克,面包受德国影响更深,更加松软并且有着浓郁的香味;而在欧洲,比起面包的外形,大家更注重口感;在韩国,“大厨并不是面包师傅,他们是设计师”这样的说法并不成立,因为韩国面包外观十分简单,看上去十分珍贵和原生态。
这样一次参观坚定了同学们做一位烘焙师的决心,也让他们意识到了他们的未来有着光明的前程。正如Pierre Canivet所说:“中国的烘焙行业充满了机遇并在蓬勃发展着”。谢谢像家乐福这样的公司,SYB的学员们有了丰富的就业机会以帮助他们能够在毕业之后自力更生。
