The incredible success story of SYB bakery trainer Zhang Zhenghai: How baking does not only take you out of poverty but make you go beyond expectations
海上青焙坊面包师张政海的传奇历程:不止于谋生,更趋于卓越
In 2009, SYB launched its first pilot training: that was the first time Zhang Zhenghai stepped foot into the big city of Shanghai and also the first time he joined the fascinating world of baking. Born in a small village near Baoji in Shaanxi province, where the villagers grow many different kinds of fruits and vegetables, Pierre has always been very proud of where he comes from. Despite the beautiful surroundings, life had not been easy while growing up and his family was facing financial difficulties, thus at a young age he decided to not continue his studies and started working at a factory. This is when, Children of Madaifu, one of SYB’s first partner NGOs, told him about the launch of Shanghai Young Bakers’ training program and the opportunity for him to learn a valuable skill.
2009年,海上青焙坊启动首届烘焙培训实验班:那是张政海第一次来到大上海,开始接触引人入胜的烘焙世界。他出生在陕西省宝鸡市的一个小村庄,蔬果种植业是当地人的经济来源。张政海(法语名Pierre)一直为家乡感到自豪。尽管家乡风景优美,但当地的生活却并不容易。因家里条件困难,他年纪轻轻就决定辍学到工厂打工。而此时,他正巧从海上青焙坊最开始的合作非盈利机构之一,马大夫之家得知海上青焙坊的培训计划,一个能让他学习一项实用技能的机会。
Six years later, after graduating from SYB in 2010, learning French at Alliance Française, being selected by SYB to study at the prestigious EFBPA, successfully graduating from the French CAP diploma in 2011 and teaching the art of French bakery to four batches of Young Bakers, Zhang Zhenghai is now part of the Chinese team which has been qualified to compete for the World Bakery Cup next February in Paris!
张政海2010年从海上青焙坊毕业以来,六年间经历了在法语联盟进行法语培训,随后被海上青焙坊送往法国著名的奥里亚克烘焙学校(EFBPA)进修;2011年考取法国CAP专业技能合格证书,顺利毕业后回到海上青焙坊任教,一教就是四批学员;而今还将以参赛选手的身份代表中国参加明年二月在巴黎举行的烘焙世界杯!
Placed first in the baguette and special breads category in the China edition of the Louis Lesaffre Cup Bakery Competition in May 2015, Zhang Zhenghai and his two team members represented China at the Asia-wide bakery competition in Indonesia in November 2015 and they won!
继今年五月在路易乐斯福杯中国赛斩获法棍组第一名后,今年十一月,张政海和另两名中国代表选手前往印尼参加了亚太区烘焙大赛并拔得头筹。
Right before the Asian selections and on his way to Jakarta, we had the immense honor to welcome MOF Baker Christian Vabret, founder of the World Bakery Cup and EFBPA, to the SYB baking center to share his experience and passion for French baking with the Young Bakers. Two weeks later, it is with great curiosity and admiration that the Young Bakers listened to Zhang Zhenghai’s experience, shared with one of the SYB graduates, Ma Mingze, who was selected as the “Young Baker Hopeful” (Jeune Espoir) of the Chinese team. Zhang Zhenghai is now the Training Director at SYB and has been consulting with a number of both amateur and professional bakers to help them learn and develop new skills or professional recipes.
在亚太区选拔赛前夕,我们还极其荣幸地邀请到烘焙世界杯创始人Christian Vabret先生,同时也是与奥里亚克烘焙学校的创办者和MOF(法国最佳手工艺者)烘焙师,在飞往雅加达赛场之前,到海上青焙坊烘焙中心与学员们分享他的经验和对法式烘焙的热爱。仅仅两个星期后,学员们怀着更大的好奇与钦佩听取了张政海老师的赛后分享,一同前来的还有毕业生马铭泽,他以“烘焙希望青年”身份也参与了印尼的比赛。张政海现在是海上青焙坊的培训总监,同时也为一些业余的和专业的面包师提供咨询,帮助他们提升技能、开发新配方。
