From March 10th to 13th 2016, the Professional Bakery training Level 2 is directed to bakery enthusiasts with previous baking experience, who aim toacquire advanced skills of French Bakery.

Shanghai Young Bakers has started since 2008 to offer one-year free French bakery training to disadvantaged Chinese youth enabling them to find qualified jobs and lead independent lives after graduation. We have trained over 150 students who have become successful bakers.

SYB offers baking theory classes, which is indispensible for a goodpractice. Started by theory introductions (such as ingredients, hygiene rules, fermentation and usage of leavens…), these classes give the participantsa better understanding of technical knowledge.

The Professional Bakery training Level-2 will be instructed by our bakery Chef Zhang Zhenghai.

2016.2 Compete in the final round of Louis Lesaffre Bakery World Cup in Paris, representing China
2015 Took part in the Louis Lesaffre Cup Asia Pacific Selection and won the champion in the Baguette and World Bread category
2011-2015 Worked as Bakery Teacher in Shanghai Young Bakers and succeeded in instructing almost 100 French bakery professionals; regularly improved his skills and techniques by cooperating with experts such as MOF master bakers during demonstrations and trainings.
2011 Studied in France and graduated from the renowned French Bakery Institute EFBPA “EcoleFrancaise de Boulangerieet Patisserie d’Aurillac”
2009-2010 learned French bakery theories and practical skills at Shanghai Young Bakers and took an internship at the famous French Bakery store “ Paul”.
2016年2月 代表中国前往法国巴黎参加每四年一届的路易乐斯福面包世界杯大赛决赛
2015年 先后参与路易乐斯福杯中国区选拔赛及决赛和亚太地区决赛,连续夺得法棍及欧包组冠军
2011-2015年 担任海上青焙坊面包培训师,成功培养了近100名优秀法式面包烘焙师。同时每年与法国MOF面包大师们进行深入的学习与研究。
2011年 于享誉业界的法国欧里亚克烘焙学校(Ecole Francaise de Boulangerie et Patisserie de Aurillac)深造并结业

-Sourdough breads: traditional leavened baguette, country bread, traditional whole wheat bread
-Danish dough: chocolate croissant, almond croissant, fruits Danish, raisin roll…
-Special breads: cereals bread, special dry fruit bread, rye bread…
-Sweetbreads and snacks: banana cake, muffin, madeleine, tartines…
-Develop your own recipe under the guidance of our teachers
