A joyful baking class by Master Baker Dominique Genty from GMP
Grands Moulins de Paris’ French Master Baker, Dominique Genty, brought sunshine to our baking center and students last Sunday, May 18th, by giving a one-day-long class. Grands Moulins de Paris (GMP) is a producer of high quality French flour that supports SYB by providing us with imported flour free of charge.
Everyone at the SYB baking center forgot how rainy of a day it was. We could really see the students’ faces and hearts brightening up as soon as they started mixing ingredients following the instructions of the master. Dominique Genty had prepared 6 different recipes for them, using the high-quality flours of Grands Moulins de Paris and showed them how to bake different kinds of breads, Danish pastries and croissants.
Dominique Genty’s 40-year-long experience in baking, as well as his smile and patience enabled the Young Bakers to make the most out of the few hours spent together. With much focus, the students were quietly listening to the Master’s precious advice and everyone even forgot to have lunch! Time went by very fast and before realizing it we had some real master pieces displayed in front of us. Not only were the students able to make delicious danish, croissants and breads, but they experienced the baking of a horse-like artistic bread, as well as a map representing France on which were displayed different breads in small format, for each region.
The tasting session and goodbye greetings took another hour, enabling the students to enjoy some relaxing time with Dominique. He also took some time during the demo to share his career as a baker: twice finalist of the highest selective award in France, “Meilleur Ouvrier de France – MOF”, in 2000 and 2004, he has been working in more than 10 different countries for the last 15 years, mainly to share his knowledge by giving demo classes. His passion started at a very early age, as his father was a baker himself. He then decided to become a bakery teacher, which he did for 15 years before joining Grands Moulins de Paris’ team.

上周日5月18日,来自巴黎大磨坊的法国烘焙大师Dominique Genty 为海上青焙坊的烘焙中心带来了一缕与众不同的阳光——他将会为SYB的学生们上一节为期一天的烘焙课!巴黎大磨坊是一个高质量法国面粉的生产商,它也通过免费为我们提供进口面粉来资助我们的项目。
尽管当天下着大雨,但是这丝毫不影响大家的心情。当他们在大师的指导下开始准备原材料时,他们的面庞都露出了笑容,心情也明朗起来。Dominique Genty当天为学员们准备了六种配方,他用巴黎大磨坊提供的优质面粉向大家演示了如何烘焙各种不同的面包、丹麦西点和羊角面包。
Dominique Genty在烘焙行业有着40年的经验,他的笑容和耐心也让海上青焙坊的学员们在几个小时的课程之中学到很多。大家都非常投入,安静地倾听者大师宝贵的意见,专注到甚至忘记了要吃午餐!时间过得飞快,到了最后一件件烘焙杰作就呈现在了我们面前。学员们不光学会了制作美味的丹麦、羊角和面包并成功完成了一个骏马形状的艺术面包,他们还绘制出了一份法国地图,并在不同的地区标示出了当地特色的面包。
品尝和告别环节大约进行了一个小时,这也让学生们和Dominique老师有了一些放松的时间。他也在演示环节和同学们分享了他的烘焙师生涯:他曾在2000年和2004年两次进入了“法国最佳面包师“称号的最后名单。在过去的15年中,他也在10个不同的国家工作,主要致力于授课来和大家分享他的烘焙知识。他在年轻时就对烘焙抱有极大的热情同时他的父亲也是一个烘焙师。在加入巴黎大磨坊之前的15年中,他从事着烘焙老师的工作。
