走出象牙塔
十月中旬对于学生们来说总是一个既可怕又令人兴奋的时刻,因为从十月中旬起,他们就要在五星级酒店开始实习了!在经历了一个半月的烘焙培训、习得了基本的技能之后,他们都非常渴望将这些技能运用到工作中去。当然,这些年轻的烘焙师们也非常担心自己是否能够满足团队的期待……当你在课堂上做错了一件事的时候,你还有机会补救,但如果你是在为几百人准备他们的早餐呢?
这是第一组开始实习的学生们的忧虑,但是第二组学生则告诉我“我不再担忧了,他们告诉我,只要努力工作,酒店里的所有人都会对你很好!”
在海上青焙坊,我们真心相信每个学生的潜能,尽管由于他们的家境都不太好,面对一些问题——如缺乏自信心的问题,需要花费一些时间来解决。让这些学生们在高档酒店这样一个高要求的地方实习,看上去的确有一些冒险。
但是,今年,我再次为这些学生们绽放出的光芒感到惊讶了。当你完全信任他们可以自己面对挑战时,他们有时甚至可以超出他们自己对自己的期待。这很大程度上要感谢他们的师父们的耐心和我们的13所合作酒店的信任。我希望借此机会感谢他们每一个人的支持,让我们一起努力,给这些年轻的烘焙师们一个新的机会!

From School to the Work Place!
Mid October is always both a dreaded and exciting moment for the students, as it’s the start of their internships in 5 star hotels! After a month and a half of intensive bakery training to teach them the basics, they were all eager to use these new skills at work. Of course as young bakers they were also worried about meeting the expectations of their team…when you do a mistake in class you can most often repair it, but what about when you are baking breakfast for several hundreds of people?
Those were some of the concerns that the group who first started the internship had, however when it came to the second group they told me “I’m not that worried anymore, they told me that as long as you work hard everyone is really nice in the hotels!”
At SYB we truly believe in the potential of each of our students, however being underprivileged youth some of them deal with issues, such as lack of self-confidence, that need time to be solved. Having the young bakers intern in such a demanding place as a luxury hotel can thus seem a bit risky.
However, this year again I was surprised by how some students simply blossom when you entrust them with a challenge and that they sometimes exceed their own expectations. This is in great part thanks to the patience of their chefs and the trust of our 13 hotel partners. I would like to thank each of them for their support, together let’s do our best to give the young bakers a new chance in life!
