一年的课程接近尾声,海上青焙坊的学员们需要慎重考虑之后的职业生涯了。6月10日,青焙坊贴心地组织第五届学员探访咖啡馆,了解将来的工作环境。

正午时分,学员们顺利抵达目的地——位于浦东陆家嘴的穀屋。穀屋是上海颇为知名的咖啡厅,以创意甜点与巧克力闻名。店主Brian已有二十余年的烘焙从业经验,并热心于公益事业。他十分愿意与年青人分享他的创业经验,已连续多年邀请青焙坊学员到穀屋参观。

Brian亲自迎接学员的到来,慷慨分享穀屋度假布朗尼配方,并亲自下厨演示做法。最让学员们受益匪浅的是,Brian谈到了身为厨师应做好的细节,如不浪费一点原料,完成操作后及时清理案板等。Brian生动有趣的描述与讲解深深地吸引了学员们,大家纷纷感叹学到了不少知识。

等待布朗尼出炉的时间里,Brian询问学员们最爱的烘焙方向,又讲述了他从普通人家的孩子成长为烘焙及糕点大师的故事。Brian谈到,他在第一个酒店实习时,不厌其烦地把每个任务做到最好,毕业后成为唯一被酒店录用的实习生。之后他在一个小岛上的豪华酒店工作时,常因交通原因没有充足原料,他不得不绞尽脑汁寻找其他材料替代。

Brian鼓励学员们更加投入地练习,直到真正掌握这种技巧。“只有通过不断的联系,方能做到完美。不论遭遇什么,一定要心怀梦想,大胆追求”,他最后说道。学员们深受鼓舞,纷纷表示愿意尽一切努力,追逐自己的人生梦想!

As the end of the semester is coming soon, SYB students are starting to seriously consider what career path they will be taking after the end of July. On June 10th, SYB had considerately arranged a café visit for all the 5th batch students.

At noon, SYB students arrived at their destination, hoF(House of Flour), a well-known dessert and chocolate café. The owner of Hof is Brian Tan, who is very committed to social responsibility and has 20 years of experience in bakery and pastry. He loves sharing his experience with young people and as such has welcomed SYB students to visit his café for many years.

During the visit, Brian welcomed the students personally. He generously shared the recipe of Hof Special Brownie with the students and demonstrated the process of making it. Most importantly, he explained clearly, not only how to bake this cake, but also how to behave as a pastry chef. His vivid explanation greatly enriched students’ knowledge. Everyone was interested and listened carefully.

While waiting for the brownie to come out, Brian asked about the students’ background. Then he told the students’ about his own story of growing from a poor family to a reputed chef and café owner. He shared many anecdotes, such as how when he was interning at a hotel with a group of students, he tried to do every little chore perfectly and won the one and only position after graduation. Another on was about when he was working in a café in a little island with poor transporting channel and racked his brains about how to find a substitute for an ingredient.He encouraged students to practice more and more devotedly, until they could master a skill.“You will only reach perfection through practice”, he said in the end. “No matter what, always dare to have dreams and to pursue them.”

Students were deeply touched and expressed their ambition to work hard to realize their own successful life!
