May: The Month to Celebrate Bread and Bakers!
Every year on May 16th, bakers around the world celebrate their patron saint: Saint Honoré. According to a legend, when it was known in his hometown that he had been proclaimed bishop, his nursemaid, who was baking bread for the family, said that she would believe the news only if the peel she had been using to bake bread turned itself into a tree. When the peel was placed into the ground, it was transformed into a mulberry tree, and Saint Honoré was then chosen as the protector for all bakers!
In Shanghai, May has now become the month for bakery lovers and professionals to meet, network and share through a series of events. This is a particularly busy and enriching time at Shanghai Young Bakers, where the students were lucky enough to have inspiring classes by Master Bakers such as MOF Pascal Tepper or Dominique Genty from the Grands Moulins de Paris. A visit to Bakery China was the opportunity for them to confirm, through the sheer vastness of this exhibition that has become the biggest bakery fair in Asia, the endless opportunities that exist for trained bakers.
Of course the highlight of these celebrations was the signature of a partnership agreement between SYB and Lesaffre, in presence of the French Minister of Agriculture, Agribusiness and Forestry Stéphane Le Foll. Yeast producer Lesaffre has been one of the main partners of SYB since the inception of the program. The three first batches of SYB students were indeed taught by baking experts from Lesaffre, which then continued to support SYB through in-kind and financial sponsorship, as well as by sharing their expertise with SYB bakery teachers.
During his speech, Le Foll emphasized the importance of trainings for the development of the food industry, and concluded by saying “I hope that initiatives such as this partnership between Lesaffre and Shanghai Young Bakers will flourish in the years to come!”

五月:一个属于面包和烘焙师的季节!
每年5月16日,世界各地的烘焙师们都会歌颂他们的守护神——圣欧诺莱。传说中圣欧诺来在家乡被任命为主教,而他家负责烘焙面包的保姆说只有当她用来烘焙面包的出炉板变成了一棵树,她才会相信这个消息。当出炉板被放在土里之后,它真的变成了一棵桑树!从此以后,圣欧诺来就被奉为了面包的保护神!
在上海,每年5月,各种各样与面包有关的活动都变成了面包爱好者和专家们相聚、交流并分享的平台。对于海上青焙坊,这也是一段忙碌而充实的日子,学生们很有幸地在很多烘焙界大师的指导下学习烘焙,例如有着法国最佳面点师称号的Pascal Tepper和来自巴黎大磨坊的Dominique Genty。在参观亚洲最大的烘焙展会中国国际焙烤展时,巨大的场面也向学员们证明了有资质的烘焙师有着光明的前途。
当然,面包节最闪亮的部分还是海上青焙坊和乐斯福在法国农业林业与食品部长Stéphane Le Foll先生的见证下签署了合作协议。酵母生产商乐斯福从海上青焙坊成立之初就是我们主要合作伙伴之一。海上青焙坊前三届学生的都是由来自乐斯福的烘焙老师教授,之后乐斯福通过给与我们物资和资金上的帮助并和海上青焙坊的老师分享他们的专业知识来支持SYB项目。
在演讲中,Le Foll先生强调了培训对于食品产业发展的重要性并总结道:“我希望类似于乐斯福和海上青焙坊这样的合作能够越来越多,并在之后的几年蓬勃发展!”
