Monday

The week began with a Chinese Pastry lesson taught by Teacher Xu at Caoyang Vocational School. Students seemed enthusiastic to bake “palmiers” for the first time. Everyone was attentively listening to the teacher and everybody’s final result looked even better than palmiers bought in supermarket, and for sure more delicious.

We are now at the SYB Baking Center, where all the French bakery and pastry classes take place: this is ,where all your “baguettes” and “pains traditions” are baked, as well as the delicious French pastries.  On Monday afternoon teacher Zhang Shuai gave a theory lesson on how to use the different equipment of the baking center, such as the maintenance, cleaning and fixing, etc.

Monday and Sunday are the only days when the Young Bakers are all together. Indeed from Tuesday on, half of them will go for their internship while the other half will have class.

星期一

新的一周在曹杨职业技术学院徐老师的西点课中开始啦!学生对第一次烘焙“蝴蝶酥”都很热情。每个人都在认真听老师讲课,同学们最终烘焙出来的产品不仅看起来比在超市买的更好看,更重要的是更好吃。

我们现在在海上青焙坊烘焙中心,所有的法式面包课与西点课都是在这里进行的,这里是你所有“法棍”和“传统面包”出炉的地方。同样也是所有的法式西点的出炉的地方。星期一下午是理论课,SYB 张帅老师介绍了烘焙中心里不同的设备的使用方法,比如如何正确的维护,清洁和修理等。

只有星期一和星期日,所有学生是一起度过的,从周二开始,一半的学生将在酒店实习,一半的学生将上课。

 

Tuesday

Tuesdays and Wednesdays are dedicated to the practice. Students arrive at the Baking Center before 8am, put on their baker’s uniform and get ready for the class. Students make the dough in the morning and it is left under a cover so that the yeast can do its work. Then, students are taught to shape the dough in smaller bits. Those will then be baked for a certain amount of time inside the impressive Kolb oven. Tuesday’s class is all about practicing the four classics of French bakery: croissant, brioche, baguette and country bread.

星期二

星期二和星期三是专门的实践课程。学生们早上不到8点就来到了烘焙中心,穿着专业的烘焙师制服为课程做准备。学生在早上做面团,并把面团留下在一个小盆盖的下面,这样的方式可以使面团在酵母作用下发酵。然后,学生被要求把面团分得更小块并进行造型。最后他们将被送进我们的高比(Kolb)烤箱中烘焙一段时间。星期二的课程,学生们学习了四种法式面包,羊角,布里奥,法棍和乡村面包。

Wednesday

Usually every Wednesday the students learn new recipes such as Italian breads, kugloff, Danish, pretzels, pizzas, and more.. But this week, the teacher had asked the students to bring a recipe of their choice, found online, in order to practice an unknown recipe and learn how to adapt it to the ingredients available. Thus we could notice a wide range of results, with different colors and shapes, the students had got very creative!

Like Tuesday, Wednesday’s lesson was concluded with a brief review of all products that were made on this day. The teacher gave each student a mark out of 100 and explained them how they could improve their skills.

星期三

通常,每周三学生们都会学习新的配方,比如意大利面包,奶油圆蛋糕,丹麦酥,椒盐脆饼,披萨等等,但是这个星期三,老师要求每一个学生带来一个自己在网上找到的配方,联系如何烘焙一个陌生的配方,并且利用起现有的原材料。因此我们可以看到各种各样的烘焙结果,有着不同的形状,不同的颜色。学生们一个个都创造力十足!

和周二课程的结束方式一样, 周三的课程以对当天所有产品的点评收尾。以100分为满分,老师给每一个学生一个成绩,并向他们解释了怎样能够提升他们的分数。

Thursday

Thursday’s program included two lessons: English in the morning and First-Aid training in the afternoon. Both lessons were very interesting and interactive, and the students really enjoy learning a new foreign language despite the difficulty. In addition they love their teachers, all volunteers from the NGO Stepping Stones!

星期四

星期四的课程没有包括任何的烹饪练习。学生们在教室里上了两节课:上午的英语课和下午的急救课程。这两个课程都很有趣,尽管有一点难度,但是学生都很喜欢学习新的外语。并且他们也很喜欢他们的英语老师,这些老师都是来自我们合作NGO铺路石的志愿者!

Friday

On Friday morning, the students have English lesson again, and in the afternoon a special course is awaiting them: life skills. During this class, every week the students discuss a different topic: from knowing themselves better, communication with others, dealing with difficulties in their professional environment, to building a career plan, setting goals of who they would like to be in a few years, the content is taught by dedicated volunteers professional in their field, Ms He and Ms Gao.

星期五

星期五上午,学生们上了第二堂英语课,下午还有一次特别的生活技能课在等着他们呢!每一周,课程都会围绕着一个新的主题展开:更好的了解自己;与他人沟通,解决工作中的问题,制定职业规划,为未来几年生活设定目标,这些课程是由何女士及高女士,二位在该领域内十分专业的志愿者教授的。

Saturday

On Saturday, half of the students are at their internship hotel while the other half is able to take a rest or can volunteer to help SYB teachers at the weekend markets. About once a month, the students volunteer at the French NGO A Pleines Mains (APM) to help them sorting out the donations they receive and cleaning up their warehouse.

星期六

星期六一半的学生在酒店实习,一半的学生或是休息或是志愿帮助在集市的青焙坊老师,每月,海上青焙坊的学生在法国NGO APM进行志愿活动,帮助他们整理收到的资助物品和打扫他们的仓库。 

Sunday

On Sunday, both groups are reunited for fun outings, bakery visits or special trainings!

两个组的学生一起进行有趣的出游活动,参观烘焙坊,或各种培训活动!
