Lesaffre trainer Ouyang gives a Master class on Asian bread to the Young Bakers
亚式面包烘培大师课:乐斯福公司(Lesaffre)欧阳老师引领海上青培坊学员探索新天地
Long-standing supporter of SYB, Lesaffre is the world leading yeast manufacturer. With its long presence in China, Lesaffre has developed an expertise in both French and Asian bakery. On May 31st and June 6th, the Young Bakers had the honor to receive training by Trainer Ouyang, whom has over 30 years-experience in the field.
全球领先的酵母生产商乐斯福是海上青焙坊的长期支持伙伴,在中国的长期发展令乐斯福在法式和亚式烘培上具备了得天独厚的优势与经验。5月31日和6月6日,海上青焙坊荣幸请到乐斯福的欧阳老师,携其超过30年的从业经验,为年轻的面包师们上了一场别开生面、收获颇丰的实景公开课。
The students were very excited about the challenge of baking 9 different products with the same type of dough! From the temperature to the kneading time, each step is extremely important to have a perfect result. While the dough was in the oven, Mr Ouyang taught the students how to prepare the ingredients for the filling and topping, telling the students that they could be very creative in the future and choose various ingredients and flavors themselves! Throughout the day, the students got to know Trainer Ouyang better and were able to ask him many questions about his experience, Lesaffre and about the technical aspects of Asian bread.
当天,学生要用同一种类型的面团烘培出九种迥异的产品,这样的挑战令他们倍感激动和鼓舞。从温度到捏揉时间,每一步的精确与否都关乎结果的成败。当以烤箱烘烤面团时,欧阳先生指导学生准备甜点面包的夹心和打顶酱料,并鼓励学生发挥创意,在今后的事业道路上采用更为丰富多元的原材料以打造独一无二的风味。通过一天的学习,学生们不仅对欧阳老师有了进一步的了解,并能够就其人生经历、乐斯福公司背景和亚式烘焙技术等方方面面大胆提问。
By mid-afternoon, a nice smell let us know that the bread was ready! What an impressive result when trainer Ouyang and the students arranged all the different breads on the table, from sweet to savory types, they were all made with the same dough!
课程也在下午接近尾声,沁人心脾的香气提醒大家,辛苦烹饪的面包即将出炉!当欧阳老师和学生将这独具匠心的各式面包一一摆上桌面,这些咸甜味俱全的佳作竟都出自于同一样的面团!
