工厂女工华丽变身法国面包师



本报讯记者 陈诗松 4年接收74名来自全国各地家庭贫困的青少年,给他们提供一年的免费培训,毕业后进入大酒店和大企业成为法式面包师。这是上海一家名为“海上青焙坊”的烘焙公益学校,近日还邀请了远道而来的法国烘焙大师为孩子们面对面传授技艺。

  法国烘焙大师教孩子做面包

  在绥德路上一间不起眼的厂房里,一名法国胡子大叔拿起剪刀在长棍面包胚子上“歘歘歘”飞舞,三下五除二,一个花式面包的雏形就出来了,引得围观的学员一片惊叹。

  这是公益烘焙学校“海上青焙坊”的实践授课点,这名从法国远道而来的胡子大叔帕斯卡·提普泰伯,原来是法国面包烘焙界最高奖项的获得者,行业内的大师级人物。此次受到青焙坊项目主管高凤熙的邀请特地来为这家公益组织的学员上一堂实践课。

  而这些17-23岁的学员都是中国贫困家庭的孩子,通过国内几家基金会的推荐幸运地成为了这里的学员,在“海上青焙坊”接受为期一年的免费烘焙培训,毕业后成为家乐福、希尔顿酒店、外滩茂悦大酒店等合作企业的法式面包师。

  高凤熙告诉记者,胡子大叔每年全世界游走,参加各种商业活动出场费不菲,但如果是公益性质的培训,他不收任何费用。“我想告诉孩子们,要心怀梦想,坚持不懈,做自己喜欢做的事情,永远保持学习的激情,这样一定会有所成就。”胡子大叔告诉记者。

  学员从受助者成长为帮助者

  在胡子大叔的公益课堂上,一位学员的着装与众不同,她叫王莉,是这里日常课程的老师,同时也是“海上青焙坊”第一批的学员。

  因为家庭贫困,王莉曾在玩具厂打工,日复一日的单调生活似乎可以看到未来几十年的样子。但当2009年被基金会推荐为“海上青焙坊”的学员后,王莉看到了生活的另一种可能。

  在“海上青焙坊”提供的学习机会下,王莉经过一年的刻苦学习成功掌握了面包制作技能,并且因为出色的技艺脱颖而出,被青焙坊选为优秀学员送往法国免费深造。如今学成归国,王莉又回到了“海上青焙坊”,从一名学员转变为老师。

  “我也很想到企业里去做面包,让尽可能多的人尝到我的手艺。但是留下来做老师,帮助其他的学员,让我觉得更有意义。”王莉说。

For the last four years, Shanghai Young Bakers (SYB), a non-profit program, has selected youth from impoverished families from all over China and provided them with a free, one-year training program, which enables them to become bakers specializing in French baking in hotels and companies. From its establishment in 2008, SYB has already helped 74 young people to lead independent lives. Recently SYB invited Master Baker Pascal Tepper from France to share his technical skills in person with the young bakers.

Master Baker passes on his skills to the next generation of bakers

At an unassuming factory building on Suide Road, a man with a large mustache was delivering a demonstration to students. With a pair of scissors flying over the baguette dough, a loaf of bread was just in its embryo form, which amazed the students surrounding him.

This is the SYB baking centre and the man, Master Baker Pascal Tepper, is a recipient of France’s most prestigious award in the baking industry. This time he accepted a special invitation from Cecile Cavoizy, current SYB program manager, to give a demonstration to the class of this non-profit organization.

The students of SYB range from age 17 to 23 and come from impoverished families in China. Referred by some of the domestic charity foundations, they were fortunate to become the students of SYB. After a year’s free training, they will then obtain the employment opportunities at host companies like Carrefour, Hilton, Hyatt on The Bund and so on.

Ms. Cavoizy said that Mr. Tepper travelled the world appearing at trade fairs and events for substantial fees. However, he does not charge anything for a charitable cause. “

I wish to tell children to persevere with their dreams and do what they love to do. As well, to continue to study and learn with passion, and they will always achieve,” said Mr. Tepper.

Graduates begin to help others

At the class of Mr. Tepper, a young woman is dressed differently from others and her name is Wang Li. She is the trainer of the SYB students and a graduate from the first class of the SYB program.

Born into a poor family, Ms. Li was working at a toy factory in Guangdong before enrolling in SYB’s pilot program. She once thought her future would be the same tedious work for the next decade of her life.

When she was introduced to SYB by a charity organization in 2009, she found another possible way of life. With the opportunity to learn the best baking skills offered by SYB, Ms. Li made the most of her one-year training program and successfully gained the qualification as a professional baker. Based on their extraordinary capabilities, she and two other students were selected to go to France for further training. After graduating with the CAP diploma, Ms. Wang returned to Shanghai to work as a trainer of SYB students.

“I’d like to work in a company and have more people enjoy my bread. But working at SYB as a trainer makes more sense. It is helping others that makes me feel the most happy,” Ms. Wang Li said.
