Our Professional French Bakery training program is a great choice for those who share grand passion for baking and want to learn professional baking skills.

The training will be held in SYB training center, with professional bakery equipment and best trainer. Taught by Zhang Zhenghai, our master bakery trainer who just return from World Bakery Cup held inFrancewith a 4th prize, the new session of training will sure offer you a rewarding learning experience.

课程在SYB的培训中心举办,由面包专家张政海亲自教授,他今年代表中国队参加了在法国举行的烘焙世界杯并获得第四名好成绩,一定会让你收获满满,提高烘焙技能。

在本次的新课程中,海上青焙坊将提供两个不同等级的项目:

Level 1- Discover the basics of French Bakery  April 14th to 17th 2016

The first level of our professional French Bakery Training is designated for aspiring bakers who would like to improve their skills, passionate amateurs and people who dream to run their own bakery shop.

This intensive 4-day training will enable participants to master the fundamentals and essential knowledge in theoretical as well as practical techniques of traditional French bakery. This course will focus on classical recipes of French breads and pastries with professional bakery equipment.

Candidates will have the opportunity to learn the full range of indispensable traditional recipes, including Baguette, Country Bread, Croissant, Brioche, and Whole wheat bread.

初级课程——探索法式烘焙的基础技巧 4.14-4.17

专业法式烘焙训练营的初级课程旨在帮助学员掌握并提高基础的烘焙技巧。如果你有志于成为专业烘焙师,如果你已经是烘焙专业人士但仍然希望提高自己的技巧,如果你是对烘焙事业有热情的业余爱好者,如果你梦想开一家属于自己的烘焙店或工作室……那你一定不能错过!

在这四天的集中培训训练中,学员将会掌握法式烘焙基础的理论与实践技巧,并且更多的在课程中通多非常多的实操练习紧密的和理论知识相结合,又着重训练使用专业设备制作经典法式面包和糕点。

学员更有机会学习各色法式传统面包甜点,包括:法式长棍,乡村面包,可颂,布里奥修和全麦面包。

 

Level 2- Strengthen your skills in French Bakery  May 5th to 8th 2016

The Level 2 is directed to bakery enthusiasts with previous baking experience, who would like to increase their knowledge and diversify their skills.

Participants will go deeper into the exploration of what makes high quality bakery product

–        Sourdough breads, a traditional method for authentic taste

–        All about Danish: chocolate croissant, almond croissant, fruits danish, raisin roll…

–        Special breads: cereals bread, special dry fruit bread, rye bread…

–        Sweet breads: banana bread, muffin, madeleine

–        Snacking offer: traditional French sandwiches, tartines and French toast

–        Develop your own recipe under the theoretical and practical guidance of the experienced teacher

Applicants are required to have completed level 1 of the professional training series, or an equivalent course, in order to participate in this high-level session. 

提高课程——强化法式烘焙技巧 5.5-5.8

提高课程主要针对有较多烘焙经验,并且希望通过课程来丰富烘焙知识以及学习更多技术的学员。

学员将通过学习多种配方,掌握不同的烘焙技巧: 

–        天然酸面包:传统工艺,经典配方,正宗风味

–        关于混酥丹麦酥皮的一切:巧克力包,可颂(羊角),杏仁可颂,水果丹麦面包,丹麦葡萄卷

–        特色面包:多谷物面包,特色欧软杂果干面包,传统黑麦面包

–        甜点:香蕉包,玛芬蛋糕,玛德琳饼干

–        法式小吃:法国传统三明治和法式面包皮萨饼,法式土司

–        自创面包:集四天的专业操作和理论培训于一身,追求,探索属于面包的自我领域(全程有老师陪同,部分参与指导)

有意向参与的学员须完成初级课程或曾完成相同水平的课程才能参加专业烘焙训练营的提高课程。 

Classes will be taught by our talented and experienced bakery Chef Zhang Zhenghai. Graduated from the French prestigious bakery institution EFBPA (Ecole Francaise de Boulangerie et Pâtisserie d’Aurillac).  Placed first in the baguette and special breads category in the China edition of the Louis Lesaffre Cup Bakery Competition in May 2015, he was part of the team represented China in the Asia-wide bakery competition in Indonesia in November 2015, which recently won 4th prize in World Bakery Cup in France.

课程将由海上青焙坊才华横溢,经验丰富的大厨——张政海教授。张政海毕业于法国精英烘焙学院——EFBPA(奥里亚克烘焙学校)。他曾于2015年5月,在“路易乐斯福杯”全球烘焙师大赛中获得中国区欧包组冠军,代表中国于2015年11月参加在印度尼西亚召开的亚洲区比赛,并在2016年作为中国队成员参加于法国举行的烘焙世界杯,全队获得第四名的好成绩。

Course fee for this 4-full-day course 

Level 1 – 2016/4/14 to 2016/4/17: 5200 RMB for 4 full days.

Registration before March 15th will be entitled to a 10% early-bird discount and the course fee will be 4680RMB.

Level 2 – 2016/5/5 to 2016/05/8: 5500 RMB for 4 full days.

Registration before April 11th will be entitled to a 10% early-bird discount and the course fee will be 4950RMB.

Registration for the 2 level programs (8 days) before March 15th  will be entitled to a 15% discount, and the total course fee will be 9095 RMB.
