Master Class: Variation of Brioche & Tourte de Seigle
In this class, you will learn:
– 4 different types of brioche : couronne bordelaise (crown shape), brioche tressee (braid shape), brioche parisienne and brioche landaise.
Traditional creamy sweet bread rich in butter and eggs, the French brioche can have a lot a different shape and variants tastes. In this class, you will learn different shaping technics by making brioches of different tastes.

– A very traditional French rye bread recipe called ‘Tourte de Seigle’.
‘Tourte de Seigle’ is a special French style rye bread characterized by an amazing dark well baked crusts scattered with flour coated islands. Inside it is typically denser, darker in color, and stronger in flavor than bread made from wheat flour. It is usually served in slices with cultured butter, cheese, foie gras, or seafood.
It has also healthy proprieties due to its richness in fiber. You will learn to keep a perfect balance of flavor and texture by learning this special bread recipe.
– 一种被称为Tourte de Seigle的地道法式黑麦面包
这种特殊的法式黑麦面包有着烘烤后深色的外壳,以面粉在裂开的表面点缀装饰。由于使用黑麦,内在比普通小麦面包颜色更深、风味更好、也更厚实有嚼劲。法式黑麦面包通常会被切片,和黄油、奶酪、鹅肝或者海鲜来搭配食用。不仅如此,它还富含纤维,十分健康。

In this class, you will learn innovative recipes of:
– Tiger Bread with rose flavor
This special French bread has a unique tiger stripes baked onto the surface; it requires specific technique of using a special paste to create the cracks during the baking process. This innovative bread has not only a distinctive texture with its crusty exterior and soft interior, but also a refreshingly sweet taste with a firm rose aftertaste.

在这节大师课中,你将会学到富有创意的配方:
– 玫瑰风味虎皮面包
这款造型特别的法式面包有着老虎的条纹,这需要一种特殊的技巧使其在烘烤过程中表面自然创造出这些纹路。这款独特的面包外皮稍硬,组织细腻绵密,有着淡淡的甜味和玫瑰的香气,十分诱人。
– Cereal bread with cheese
With cheese added into the traditional cereal bread, this special recipe is a combination of typical French taste. This bread has rich flavor, crispy crust and soft interior. A classical recipe revisited.
– 奶酪谷物面包
将奶酪加入传统的谷物面包,这款配方汇聚了法国人挚爱的口味。它有着层次丰富的风味和口感,外皮脆而中间柔软,是经典配方的再次创造。
These imaginative recipes combine different techniques and bakery theory, which will give you more possibilities and take you on a journey to professional French bakery.
这些富有想象力的配方集合了许多不同的烘焙机器和理论知识,让你在课后可以举一反三,给法式烘焙带来更多的可能性,并引导你如何在专业烘焙中将传统与创新结合。
The upcoming master classes are taught by expert baker Zhang Zhenghai, former brilliant SYB student who furthered studies in France. In 2015, he won first prize of baguette and special bread in Asia in Louis Lesaffre bakery cup. In February 2016, he competed within Chinese team in World Bakery Cup held in France and came back with fourth prize.
Also you will also contribute directly to the charity program run by SYB to lift lives of marginalized youth by providing them with one-year free vocational training of bakery.
这些大师班课程都由SYB的专业烘焙师张政海老师授课,他是SYB的第一届毕业生,后在法国深造,在2015年获得乐斯福杯烘焙大奖赛亚洲区法棍和特殊面包的冠军,在2016年2月,张老师和中国队一起参加于法国举行的烘焙世界杯,并取得了第四名的好成绩。
参与课程同时也是对海上青焙坊慈善项目的直接支持,我们向困难的青少年提供一年免费的法式烘焙培训,帮助他们自力更生,找到工作。

We limit the class to 12 people to ensure high-quality training.
