In the last month of 2019, SYB will bring you another good news about catering service! (If you haven’t read the previous article about delicious food, here is the link for you.) Shanghai Young Bakers social enterprise is cooperating with Village 127 to provide a time-limited special catering menu using the organic apples from the special supporting program “Apples of Madaifu”. Let’s have a look at what you can order!
A “Danish” is a kind of multi-layered, laminated sweet pastry originated in Vienna, Austria, but adjusted by Danish bakers and became popular and known as “Danish pastry”. The apple Danish is infused with a sweet “Apples of Madaifu” sauce.
Created accidentally at Hôtel Tatin in France in 1880s, this upside-downtart is an iconic French dessert. To make a tarte Tatin, five “Apples of Madaifu” will be cut into slices and brushed with caramel and butter. Apple slices are then arranged on top of a puff pastry base and baked as a tart.
In addition, you can also order the other two types of tarts in our menu. One is Almond Apple Tart, a tart infused with almond sauce and baked with “Apples of Madaifu” slices on top. The other is Apple Crumble Tart, using sweet dough as base. It is baked with apple dices and butter crumble, also made with raisin and Chinese cinnamon as topping.
All our tarts have a diameter of 20cm (about 8 inches) and is a sweet and delicious choice for a lovely winter gathering!
If you are not very into pastry but still want to support charity, then the apple purée (apple sauce) is a good choice of you. Made with “Apples of Madaifu” and sugar, the apple purée is a good company for other food, such as bread, roast pork, French fries, and others.
The above products are under the technical guidance of SYB and are produced by SYB graduates working as professional bakers at Village 127 with fine imported ingredients. Shanghai Young Bakers
Shanghai Young Bakers is a charity programme providing one-year free training of French bakery. It targets at Chinese youth from poor families, aged from 17 to 23, who are recommend by NGOs. It endeavors to help them to find qualified jobs and lead independent lives after graduation. Shanghai Young Bakers started its own social enterprise in 2011 to utilize its expertise and resources in French Bakery and Pastry in order to become more financially independent and better help its own program to function. All the proceeds will be used to support SYB’s charity program.
The Children of Madaidu
The association was founded in 1999 by Doctor Marcel Roux, former vice-president of Médecins Sans Frontières. His Chinese name was Madaifu, Ma for Marcel and Daifu for doctor. Madaifu is supporting the education and life needs of orphans in Gansu and Shaanxi Provinces. Since its establishment, Madaifu has recommended relevant students to SYB to register them in the SYB free French bakery and pastry training. The “Apples of Madaifu” yearly campaign is the sale of organic apples planted in Gansu and Shaanxi provinces and the revenue will be used to support the children’s living and studying.
