French bakery is very popular in China, but sometimes true French bakery is hard to distinguish among city convenient stores or chain coffee shops. So what constitutes authentic French bakery? Shanghai Young Bakers will gradually show you how to recognize characteristics of true French bread and pastries when you see them, starting with the most representative French pastry, the croissant!
- There must be clear layers in the croissant’s flaky crust
- The inside of the croissant must have a honeycomb-like makeup of air bubbles
- The texture of the outside must be crispy, in contrast with the inside’s sinewy soft texture
- An authentic croissant will be a golden color with a certain degree of luster
- It must have a rich buttery scent
