Brian Tan, founder of HoF, shares his life experience with the SYB students
On Sunday June 29th, Brian Tan welcomed the SYB students to HoF – Brasserie & Bar located in Lujiazui. As a professional pastry chef and supporter of SYB program, it is now the third time Brian meets the Young Bakers to share his story.
Born in Malaysia, Brian was not very fond of studying. After leaving school Brian first decided to learn hotel management andsucceed in these difficult studies through hard work and determination. He did his first internship at the Regent Hotel in Kuala Lumpur, where he was working 3 shifts per day, in different departments of the kitchen. He was then assigned to work in the bakery and pastry department and where he discovered his passion for the art of desserts. As at that time, all high level positions in the industry were reserved to foreigners, Brian decided to go abroad and to acquire more knowledge in pastry. He first worked in Singapore as an assistant pastry chef at a newly-opened Ritz-Carlton. Always looking to deepen his knowledge even at the price of a lower salary, Brian first decided to go to London to work at a Sheraton hotel and then moved to the Caribbean islands. After experiencing different cultures in several Western countries he decided to come to work in Shanghai. As creating his own enterprise had always been his dream, he started with supplying freshly baked bread to high-end international hotels in Shanghai and then decided to create HoF, the first dessert lounge in China. HoF has now three branches in Shanghai and is highly renowned for the quality of its chocolate desserts as well as the pairing cocktails.
As Brian has worked hard to pursue his dream to become a pastry chef, his story is truly inspiring to the Young Bakers and comes right on time as they are about to graduate and start their career! Thank you Brian for sharing your life experience and precious advice with the Young Bakers!

6月29日,星期天,Brian Tan邀请海上青焙坊的学生们来到抵触陆家嘴的hoF-Brasserie&Bar。作为一名专业糕点师及海上青焙坊项目支持者,这是Brian Tan第三次于这些青年烘焙师们相聚,分享他的故事。
Brian Tan来自马来西亚,但他小时候并不是非常热衷于学习。离开学校后,他立志学习酒店管理,凭借不懈的坚持和努力他取得了成功:他获得了位于吉隆坡的丽晶酒店的实习,在那里,他在不同的厨房部门内有三轮班。最初的人物是在糕点部门工作,但随后他发现自己对于甜点艺术充满了热情。与此同时,随着许多高层职位对外工人开放,Brian Tan决定出国学习新的知识。他的第一份工作是在新加坡新开业的丽兹卡尔顿酒店里担任助理糕点师。Brian Tan始终认为对于糕点也的不懈钻研是最为重要的,因此他宁可选择薪水较低的工作。他去了伦敦的喜来登酒店工作,之后又远赴加勒比群岛。在体验了西方国家的不同文化之后,他决定来到上海。长期怀着创业的梦想,他的第一步是想伤害的高档国际化酒店提供糕点,之后他开办了中国的第一件甜品酒廊hoF。目前hoF在上海已经有了三家分店,并凭借着它美味精致的巧克力蛋糕和配对鸡尾酒闻名。
