“This month elapsed so fast”. The Young Bakers only started their new lives one month ago, but they all already seem to be used at it. Last week, we have spent one full day at the Baking Center with them, in order to take pictures and collect some precious feedbacks about their very first impressions of Shanghai.
One shared feeling: “We love Shanghai!” Some are impressed by the city’s high buildings, some other by its intense activity, but they all seem to be happy being a part of the Shanghai life.
“My first impression of Shanghai? Too hot!”, tells one coming from the cold Northeast of China. Feeling shared by Liu Dong, one of the two teachers, who also participated in our short interviews.
In front of the students, Liu Dong keeps an authority face, but with us, he cannot hide his pride. “I am very much impressed by the quality of the products made by the Young Bakers”. Wang Jingyi, the other teacher, completes the praising: “They are all really studious and happy to learn.”
A student from the very first batch, then successively pastry teacher and SYB’s technical director, Xiao Jinjin looks at this 11th batch with some nostalgia: “They are very lucky to learn in such a great environment.” In fact, when she was a student, SYB did not have its own Baking Center yet…
After one month, although many of them never ate any French bread or pastry before, preferences start to emerge; we can already see who will become a Bakery chef and who will choose the Pastry way instead.
“I really like my new daily life”, declares another student. “Last year, I was working hard, it was very tiring. Now, when I make pastries, I don’t feel tired at all, just joyful.” At that time, I did not know what to do with my life”, adds one Young Baker with emotion. “Now, I know.”
So how about the future? “I want to open my own shop”, is a sentence that we have heard several times that day, firmly stated by shiny-eyed students. Some others, equally passionate but maybe more aware of what it really takes to start a business, answer a simple “I would like to find a job here in Shanghai”, or an even more humble “I’m not mature enough. I’ll take my decision in a few months”.
However, whether they have a long-term plan or not yet, all Young Bakers realizes that they are part of a demanding program that will, if they work hard enough, propel them to the very top of the world’s bakery and pastry industries.
They are not only learning bakery and pastry with the best teachers (both Liu Dong and Wang Jingyi spent one year at the French Bakery and Pastry School of Aurillac) but also with the best ingredients (all our ingredients are high-quality imported products from France). Their products already reach high professional standards; yet, the Young Bakers still have ten more months to keep improving.
