提起烘焙,新鲜出炉的面包的香甜气息和松软温热的质感总是能带给人满满的幸福感。面包和甜点的文化发展到今天,已成为一门特殊的舌尖艺术,其中法国最具代表性。法国人的传统形象即头上戴一顶巴斯克贝雷帽,腋下夹一根长条面包。如今,法国面包和甜点对于中国消费者已不陌生。在上海却有着这么一个机构:它由12个在上海的法国人自愿发起,成立了一个可以提供给中国年轻的贫困生、孤儿免费学习法式烘培的学校——海上青焙坊。

“授人以麦,三餐之需;授人以焙,终生之用。”

中国有句古话叫“授人以鱼,不如授人以渔”,说的是传授死的知识,不如教会人自主学习知识的活的方法。做慈善也是这个道理。给需要的人一个面包是好事,但只够他吃一顿饱饭;而教给他制作面包的方法,则是让他改变现状、受益一生的大好事。

2009年2月,12位来自法国在华青年企业家社团(JCEF)的志愿者想要共同发起一项公益项目,加上当时上海吃不到地道的法式面包,既能把烘焙技术教给需要帮助的中国青年,使得他们过上自尊、自立的生活,又能把法式烘焙传承、发扬的海上青焙坊(Shanghai Young Bakers)这一公益项目便应运而生。它致力于向17至23岁的中国贫困青年提供为期一年的免费烘焙培训,其中包含法式和中式烘焙课堂培训以及四、五星级酒店的实习机会,旨在在慈善资助的基础上,进一步帮助学员发展技能以及团队精神,使他们获得成为合格烘焙师的机会,并帮助他们在毕业后顺利就业,自力更生。同时,学员也将学习生活技能和英语,并由全职老师确保兼顾每个学员的发展进步以及自我价值的实现。“授人以焙”,看似简单,却可以改变一个贫困青年的一生。

为了确保最需要的孩子受益,海上青焙坊和6个国际慈善机构建立合作关系,通过它们的推荐录取学员参加培训,并且每年仅接收20-30名学员以保证培训质量。此外,海上青焙坊项目团队是由一位全职员工以及其他来自不同背景国家的实习生和志愿者构成的,他们用业余的时间、各自的专长以及资源来支持海上青焙坊,将慈善的概念发扬光大。

“我们的目标是成为中国法式烘焙培训的行业标杆。”

随着中国西式面包房数量快速增长以及高档酒店数目的增多,烘焙市场也正蓬勃发展。然而,传统法式烘焙培训在中国市场仍然缺失,合格的法式烘焙师依然紧缺。海上青焙坊的成立,则以专业的师资培训填补了这一缺口。海上青焙坊的传统烘焙培训基于法国顶级烘焙学校奥利亚克烘焙学校(EFBA)设计的法师烘焙技能证书CAP,培训包含理论与实践两部分课程,其中法式烘焙及西点是项目的核心课程,由三位海上青焙坊自己的教师负责教授,沿袭了法国严格标准及专业性。同时,按照欧洲流行的“轮作”培训概念,通过两周课堂教学、两周高档宾馆厨房实习的教学模式,使学员习得并掌握精湛的烘焙技艺。

鉴于台式烘焙在中国广受好评,培训也包括了亚洲面点课程。并在上海曹杨职校的帮助下,学员通过学习、考试最终可获得由上海劳动局颁发的西式面点师专业技能证书,拿到国家认可的执业证书和文凭。时至今日,已有近100名学员顺利毕业,他们中的很多人目前正在JW万豪、派悦坊、穀屋等面包房、酒店工作。

作为一项好的公益项目,怎样持续长久地做下去,一直是慈善和公益事业的重点和难点。自2011年以来,为了实现项目的可持续发展,海上青焙坊的法式烘焙课程由三名一期学员传授,形成一个良性循环。他们凭着学习期间的出色表现,被推选远赴法国奥利亚克烘焙学校(EFBA)进修,并取得CAP证书,具备出色的法式烘焙技术。此外,拥有自己的烘焙中心和教师使海上青烘焙坊有机会开展商业活动,从而将获得的收益全部投入培训计划中,提升自身的“造血”功能,以减轻资金的负担。

Speaking of bakery, the fragrance of freshly baked bread and its soft texture always make people feel very happy. The culture of bakery and pastry especially represented by France has fermented into an art of cuisine. Traditionally, the image of French people is projected as wearing a Basque beret and holding a baguette underarm. Nowadays, French bakery and pastry are popular with Chinese consumers. Initiated by 12 French people living in Shanghai for a few years, Shanghai Young Bakers (SYB) is a charitable organization providing fully-sponsored French bakery training to disadvantaged Chinese youth.

CHARITY

Give an orphan some bread, you feed him for one day; teach him how to bake, you feed him for a lifetime!

Chinese proverb tells ‘Give a man a fish, you feed for a day; teach him how to fish, you feed him for a lifetime’, which means it’s better to equip skills rather than simply teach knowledge. The same is true of what SYB is doing. Shanghai Young Bakers takes it back as ‘Give an orphan some bread, you feed him for a day; teach him how to bake, you feed him for a lifetime!’ SYB teaches underprivileged youth valuable baking skills that enable them to change from unfortunate children and benefit them for a life time.

The charitable project was launched by a team of 12 French volunteers from French Junior Economic Chamber of Shanghai (JCEF) in February 2009. Inspired by the discovery that authentic French bakery is still lacking in Shanghai, the baking project will empower students to find qualified jobs though learning practical baking skills and promote French baking culture as well. During the one-year training, SYB students (aged 17 to 23) follow classes in traditional Western bakery, life skills and English, combined with a practical internship at international hotels. Thanks to donations, SYB helps students to learn baking skills and teamwork spirit which are needed to become competent baking professionals. What’s more, SYB assist students to find employment opportunities and lead independent lives after graduation. In addition to baking classes, life skills and English learning are also indispensible to students’ personal and professional development. Every SYB student is guided by full-time teachers towards realizing self-value. “Teach him how to bake” seems to be easy, but it changes the life of disadvantaged youth forever.

Shanghai Young Bakers cooperates with a network of 6 international partner NGOs through which students are recommended and recruited to ensure that the program benefits those who need it most. The program accepted 20 – 30 students per year to ensure high-quality training is provided. SYB team is based mainly on one full-time staff joined by volunteers of different nationality who invest their spare time, resources and expertise to help and promote SYB charitable project.

Become a leading reference in French bakery training in China

The bakery market was booming in China, due to the rapid growth of bakery houses and 4/5 stars hotels. However qualified bakers were still lacking, given that no French bakery training existed in China so far. Shanghai Young Bakers was thus created to fill the gap. SYB’s traditional bakery training content is based on the French bakery diploma CAP, as developed by the Ecole Francaise de Boulangerie d’Aurillac (EFBA), a top-ranked bakery school in France. The bakery training includes both theory and practice classes. And the core class of French baking is taught by three graduates from SYB program, who received and passed the top standard of French bakery. Based on the French “alternance” training concept that is very popular in Europe, the SYB training program allows students to gain excellent baking and life skills by alternating 2 weeks of classes at school with 2 weeks of practical internships in international hotels for the whole duration of the program.

Given the popularity of Taiwan-inspired bakeries in China, the training program also incorporates Chinese-style bakery products. With the support of Caoyang Vocational School, SYB students pass official “Western Bakery” diploma, which is delivered by the Shanghai Labor Bureau and recognized throughout China. There are about 100 successful graduates so far and most of them are currently working at international hotels and bakery houses like JW Marriott, Pantry’s Best, and hoF.

SUSTAINABILITY

Achieve sustainability through a social enterprise model

How to make a charity project sustainable is a big problem facing NGOs. Since 2011, three top SYB graduates of the first enrollment have been acting as trainers in French baking class, which forms a “giving back” cycle to support SYB sustainable development in return. Because of the excellent performance, they were sent to study in France at the worldwide renowned bakery school EFBA and graduated with the C.A.P. diploma from EFBA. What’s more, SYB baking center and teaching resources allow more commercial activities to take place so that the generated revenue can support training programs, complement donations and alleviate financial burdens.
